I just did my daughter's 3rd birthday party and we had the cake to beat
all cakes!  I used an applesauce cake (should be in the archives) and a
buttercream type icing done with Crisco and Parve margerine (also should
be in the archives) and made a train.  I used mini loaf pans to do the
cars.  The engine was 2 loaves sort of sculpted together - just one cut
out to allow the horizontal one to slip into the vertical one for a good
fit.  I split the loaves to make layers so that there was lots of sugary
icing - each car was a different color.  I used mostly non dairy candies
for decoration, but did use chocolate cookies for the wheels.  I used
pretzel sticks for the ties and licorice for the track.  I just took the
decorations off my daughter's piece - she is no longer hyper sensitive
but there were also other kids there that have food allergies.

I'll also mention that the cake is also egg free without any
substitutions.  I did the baking ahead and had the cakes in the freezer.
It took me about 2 hours the night before to make all the icing in the 5
different colors with having to clean everything between, assemble, and
decorate.  I assembled everything on 1/4 sheet cake boards with green
paper "doilies."  2 cars fit perfectly on 1 sheet and then fit into a
cake box for the night for safe keeping.  Only the engine did not fit
into a cake box - it's too tall.  I do have great pictures!
