I don't know if nut butters are made from roasted nuts.  I also
don't know how significant the changes from roasting might be,
but I certainly can't rule out the possibility that this is part
of the explanation.

I rather suspect that roasting the nuts, as with other cooking of
foods, makes it easier to eat more of that food, i.e., easier to
overeat it.  That doesn't seem to be what Mary is talking about
however.  At least, I didn't get the impression that she thought
she was eating of lot of nuts, or fruit.
