Hi list members. By accident, I once made a pizza crust that turned out
like a huge cracker!  I was wondering if some creative baker could use
this information to come up with a recipe for saltines.

I don't recall where the recipe for the pizza crust came from....but it
called for a flour mixture... I was new to the list then....I only had
potato starch flour, so that it what I used.

I don't recall much from the recipe except potato starch flour, water,
yeast, and xanthan gum....

I poked holes in the dough after pressing it in the pizza pan and baked
it...however long you bake a crust at whatever temperature you usually
bake a crust at.

Voila!  I had a huge crispy cracker like crust.  It made a good pizza
crust really....crispy, crunchy...but it looked so much like a large
cracker...I had to laugh when I got it out of the oven.  It was not very
light in texture, mind you...it was a little heavier than that.  But you
know how saltines have two layers, sort of?  This was like that.

Good luck you to you bakers.  Sorry... I didn't save that recipe after
going yeast free and milk free.  I had to give up pizza entirely.
