Read an article of interest from GNC's Let's Live Magazine- here is a quick
summary directly from the magazine: "Mochi, a traditional Japanese food made
from sweet rice by first steaming sweet rice, pounding or grinding it until
the grains break open and stick together, then forming it into a thin block
and drying it. Nutrtitionally. it is a powerhouse particularly when made from
Brown rice. It is rich in complex carbs, protein and minerals and contains
little fat. It is free of cholesterol, sugar, dairy, wheat, flour, salt,
preservatives and additives and contains no fat unless seeds or nuts are
added to it. Typically sold in 12oz packages for $2-$3. Comes in wide variety
of flavors: plain, sesame-garlic, cin. raisin, mugwort? and pizza. Can
usually be found in refrig or freezer section of natural food stores. It will
keep in the freezer for over a year, but once thawed should be used within
7-10 days. Once opened, should be wrapped in a plastic bag. It is not a ready
to eat product- it must be cut and cooked before ingestion. Cooking
reconstitutes it, alloqing it to expand and return to it's original size.
When cut inot tiny squares or trianlges, baked mochi puffs up to resemble
croutons. When cut into 2-3" squares and baked, mochi balloons out,
resembling Mexican fried dough pillows, sopapillas. Cut into pencil length
sticks or logs, baked Mochi becomes bread sticks; cut inot thin slabs and
baked in a waffle iron, it makes almost instant waffles. Grated and sprinkled
over a fruit pie or pizza and baked, mochi melts like cheese. It can also be
grated or chooped and simmered in a soup, stew, sauce or pot of hot cereal to
create a creamy texture."

By the way- the magazine "Let's Live" is quite informative and I have found
some very good articles- even a few mentions of CD. for more info they have
