The word "vinegar" by itself is not "dubious", according to the consumer
rep, Felicia Satchell,  from the FDA at the Baltimore meeting last year.
It's cider vinegar, just as "wine vinegar" is indeed made from wine. On the
other hand, "red wine vinegar", "wine flavored vinegar", etc. may be
something else.
 
I've never seen ricotta with anything but "vinegar" in the ingredient list
and use it all the time.
