I use Nelson David's Celimix white bread mix as well, and find it makes a
great loaf. The mix I use is pre-packaged in 6 packages, and makes 6
loaves. For 1 loaf, I follow the recipe that is enclosed with the mix. It
rises just fine in about an hour, but doesn't get a "bubble" top on it
like real bread does. For variation, I add cinnamon, a few raisins, flax
or poppyseeds, etc.
 
1 package Celimix
1 1/2 cups water (or you can add 1 egg and decrease the water
                  accordingly).
1 tsp dry yeast (yes, just 1 tsp).
1/2 tsp. sugar
 
I don't add oil - there's already oil in the mix.
