>(2) Any ideas where I can get some alternate flours, such as

I have found that most health food stores have brown rice flour in
addition to the white. I hate plain white bread, so I make sure at least
50% of the rice flour I use is brown. Each loaf of bread I make also has a
fruit or vegetable ingredient (acorn squash, apple, sweet potato,
pineapple, etc) for flavor and vitamins. I also always add some rice brain
for fiber. These breads have been turning out more delicious than any
gluten breads I have EVER made. Only problem is...they may be gluten free,
but they are NOT calorie free!!!
So, Beware!
