I'd like to extend a thankyou to the folks who moderate this list which is
now 800 people strong. This has to be a lot of hard work and it's nice to
be part of a group that supports each other so much.

I have a question which may not be answerable. I have been hearing a lot
about 'celiac style reactions' to gluten containing foods when you are on
the diet. Can anyone describe what this might consist of? I know that
celiac reactions are extremely varied and I recognise some of my own long
term signs of vitamin deficiencies. I also know eating bread is a sure
way to fire up the lower intestine about 8 hours later and a nice
headache to go with it. What I am looking for is other short term or even
immediate reactions to gluten foods, like a choking sensation that has been
reported, so that I can be on the lookout for hidden gluten.

Also (sorry to run on) is it customary to feel pretty good for the first
while GF then suddenly feel ill for a bit. I am getting this feeling of
being ill, headachy for days, sore back, and I'm not sure if it's a kind
of withdrawal thing or I just have the flu! I read one post where someone
mentioned this happened to them. I've been about 3 weeks on the diet and have
been religiously GF (still getting skinny :) ) but I don't feel well this
week and I hardly ever get the flu. I read on the expert postings that
gliadin produces opiates in the gut and perhaps there occurs a withdrawal
similar to that of exogenous opiates when you stop consuming gluten. Any
thoughts or experiences much appreciated.
