I have terrible gut problems with Xantham Gum - lots of gas, diarrhea,
and what I guess one would call fecal incontinence: a sudden burning
and liquefacation that is impossible to hold in more than about 30
seconds.  (God help you if you're more than 30 seconds from a bathroom
or in something hard to unzip!)
 
However, I have had NO problems at all with using Methocel, which I order
from Ener-G.  Just use the same quantity as specified for the XG.
 
Also, do try out the recipe I just posted for plain "muffies".  They
are no good for making sandwiches with, but are satisfyingly "breadlike",
quick and easy to make, and don't use any kind of gum.
