The symptoms you describe are consistent with celiac disease.
However, these symptoms can also be caused by a number of other
ailments.  I recommend seeing a pediatric gastroenterologist and
getting an official diagnosis.  What if the problem is NOT
celiac disease?  By trying the diet on your own, you may fail to
discover the true cause of your son's symptoms.

I'm a firm believer in getting a proper medical diagnosis first.
If the problem is celiac disease, or even a wheat allergy, this
list can be a great help.  However, if the problem is something
else, you would be better off looking elsewhere for help.

Insist on a referral from your family doctor to a pediatric
gastroenterologist, if you have any doubts about it.  He may
think it's unnecessary, but he shouldn't have any real objection
to you seeing a specialist other than a concern that you are
wasting time/money.  If he won't give you a referral,
perhaps it's time to shop around for a new doctor.
