Dear List Mates,

Our local newspaper got caught up in the buzz of Hunger Games and published
an immense number of recipes dedicated to that movie/novel. Yours truly's
spouse read all of them and found one she wanted to make gluten free. It's
a low-fat fresh orange muffin bread that is filled with banana, raisins,
fresh blueberries and nuts. The flavorful muffin bread is good with
morning tea/coffee and will work as an informal dessert with friends.
Different from some GF goodies, it is also good the next day after baking.

The bread is very easy to make with a mixing spoon and your hands. Although
it uses an egg and buttermilk, you could probably use ground flax seed and
boiling water as an egg substitute and soy/almond milk and lemon juice as a
buttermilk substitute (not tested).

If you are interested, navigate to http://bit.ly/GF_Bake , search for
"Quick breads", and look for the red chevron. If the above link does not
work, copy/paste the following into your browser:
http://home.comcast.net/~vhdolcourt/gfbaking/ . Note that some email
programs corrupt the "tilde" that precedes the "vh". The tilde is to the
left of the 1 key on your keyboard.

Please let us know if you have questions.
