I also had several people ask me to share any recipes I received:  

--From Bev: These are best warm/fresh like donuts and since it only makes a dozen, that's usually not a problem!   This was my go-to recipe when I had to bake something before school for the kids
Banana Bread Muffins  Lieven
2/3 c. sugar
1/3 c. vegetable oil
   2 large very ripe bananas 
   1 tsp.  lemon juice
   2 eggs       
   3 Tbs. water or milk (approx. depending on how ripe the bananas/squishy are.)
   1 tsp. vanilla
   2 c. g.f. flour
   1 tsp. baking soda
1/2 c. chopped nuts, opt.
 
Beat sugar, oil, lemon juice, eggs & bananas tog. until light & fluffy.  Add milk & vanilla, mixing well.  Blend in dry ingredients.  Fill greased muffin tins 2/3 full.  Bake at 350º for 20-25 min.  Makes about 2 dozen.  (Use 3-4 bananas if small.)

 
When I find ripe bananas on clearance, I will mix the bananas with the oil, sugar, & lemon juice in the recipe & put it into the freezer.  With the oil & sugar, the banana mixture will get very stiff but never freeze solid.  When you are ready to bake, zap the premeasured banana mixture until soft (a minute or two), the add the rest of the ingredients--Putting batter into the pan takes longer than anything!  You don't have to deal with a rock hard clump of bananas and they don't turn brown.  Lets you back when you want to, not when bananas as calling. 
 
(Quick bread can also be baked in straight sided canning jars. Grease inside of jar & fill 2/3 full: bake until they test done w/ a wooden skewer. Heat canning lids in hot water to sterilize.  Removed jars from oven one at a time & immediate top with hot lid & right to seal. It's a good way to make break for a college student who don't have access to a freezer.)

Donut Muffin...  Lieven
 
Combine:  2/3 c. sugar
             1 1/2 c. g.f. flour
                   2 tsp. baking powder
               1/4  tsp. salt
               1/2 tsp. cinnamon
               1/4 tsp. nutmeg
               1/4 tsp. xanthan gum (optional)
 
Mix in blender:    1 egg
                    1/2 c. milk
                    1/3 c. melted margarine or butter
                       1 tsp. vanilla
 
Add to dry ingredients. Mix to moisten.  Fill lightly “Pam-ed” muffin tins half full.  Sprinkle w/ cinnamon sugar. Bake at 375º for 15-20 min.  Makes about 1 dozen.



--From Carol: I don't know the answer to your questions, but I do have a great pumpkin
bread recipe converted to GF.  This recipe is at least 60-70 years old.  I
found it in my Mom's old Capsula club recipe book, from Kansas.

Pumpkin Nut Bread
3 cups flour
3 cups sugar
3 eggs (I use X lrg)
2 cups pumpkin (I use fresh puree)
1 cup vegetable oil
1 tsp cinnamon
1 1/2 teas salt      
1 teas baking soda
1/2 teas baking powder
1 teas nutmeg, cloves ea     
nuts and raisins to your liking
1 teas X gum
I added a little water, less than 1/4 cup

Makes 6 small foil loaf pans, plus 6 muffins
Combine dry ingredients.  Combine wet ingredients.  Add flour mixture
gradually, mixing well.  Add raisins and nuts, dates if you'd like.  Bake
350.  Pans about 35-40 min, muffins about 23-25 min.  Test w/toothpick Enjoy!

BANANA LOAF 

2/3  CUP SUGAR   
2CUPS FLOUR BLEND*
1/3 CUP MARGARINE OR BUTTER
1TSP. BAKING POWDER
2 EGGS
1/2 TSP. BAKING SODA
3 TBSP. SOUR MILK** 
1/2 TSP. SALT
3 MEDIUM MASHED BANANAS 
1/2 TSP. XANTHAM GUM
 
MIX TOGETHER SUGAR, MARGARINE AND EGGS.  THEN STIR INSOUR MILK AND BANANAS.  SIFT TOGETHER ANDSTIR IN REMAINING INGREDIENTS.  POUR INTOGREASED LOAF PAN 9x5x3.  BAKE AT 350  45-50 MINUTES OR UNTIL IT TESTS DONE.
 
*FLOUR BLEND (PUT ALL INGREDIENTS INTO AN AIRTIGHT CONTAINERAND SHAKE UNTIL COMBINED WELL):
2 CUPS BROWN RICE FLOUR (EXTRA FINELY GROUND)
2/3 CUP POTATO STARCH
1/3 TAPIOCA FLOUR
  

**TO SOUR MILK – FOR 1 CUP MILK USE 1 TBSP. VINEGAR
I made this last banana recipe and it turned out great. I followed the directions closely.
I am looking forward to trying the pumpkin bread and muffins this next week as my daughter will be home to help us eat them.
