Gluten-Free Culinary Lecture Series presents Essential GF Baking Primer
featuring Carol Fenster, Ph.D. of Savory Palate, Inc. and acclaimed
Executive Chef Matt Selby.
For those interested in nutrition and the culinary arts with a gluten-free
focus, The Art & Science of Gluten-Free GastronomyT 2007 Lecture Series in
Denver (the first city to host this year) offers a menu of ten remaining
lectures and tasting demos to enjoy featuring industry experts, culinary
school instructors, and notable restaurant chefs.
On Tuesday, February 20, 2007 at The Phipps Mansion in Denver, Colorado,
gluten-free culinary pioneer and leading cookbook author Carol Fenster,
Ph.D. of Savory Palate, Inc. and nationally recognized Executive Chef Matt
Selby of Vesta Dipping Grill and Steuben's Food Service will present The
Gluten-Free Flour Code and When Worlds Collide as the second of eleven
monthly lectures and tastings that explore the art and science of
gluten-free cuisine.
This February, take an in-depth look at the wide world of gluten-free flours
and their culinary powers with a focus on the flour blends you need for
gluten-free creations; ingredient profiles for successful, delicious and
healthy gluten-free baking; recipe substitution secrets that will help you
transform favorite wheat-based recipes into delicious gluten-free versions;
and much more.
Led by Carol Fenster, Ph.D. of Savory Palate, Inc., this presentation is
designed to be a necessary primer for anyone interested in learning or
brushing up on the basics and essential strategies for baking and cooking
the gluten-free way using nutritious, artisanal ingredients. In addition to
gathering tips and techniques galore, you will learn which grains and flours
are particularly beneficial from the perspective of fiber, a critical link
in a nutritious gluten-free diet.
And to pamper your GF palate with a signature style all his own, local
celebrity Executive Chef Matt Selby will demonstrate his gluten-free recipe
creation of a savory Wild Mushroom Tartlet with Goat Cheese and Roasted
Tomatoes using selected gluten-free flours. A tasting of Selby's creation
will top off the presentation.
Last month, award-winning Executive Chef Elise Wiggins of Panzano Restaurant
demonstrated how to make sumptuous gluten-free tortellini pasta using
amaranth flour and tapioca flour. Other chefs to be featured later in the
Denver series include: Chef Instructor Eric Stein of Johnson & Wales
University-Denver; Chef de Cuisine Curtis Lincoln of The Brown Palace;
Executive Chef Devin Wade of P.F. Chang's China Bistro; and Executive Chef
Adrian Heuer of The Denver Museum of Nature & Science. Additional chefs and
speakers will be announced this year.
