This February, take an in-depth look at the wide world of gluten-free flours and their culinary powers with a focus on the flour blends you need for gluten-free creations; ingredient profiles for successful, delicious and healthy gluten-free baking; recipe substitution secrets that will help you transform favorite wheat-based recipes into delicious gluten-free versions; and much more. Led by Carol Fenster, Ph.D. of Savory Palate, Inc., this presentation is designed to be a necessary primer for anyone interested in learning or brushing up on the basics and essential strategies for baking and cooking the gluten-free way using nutritious, artisanal ingredients. In addition to gathering tips and techniques galore, you will learn which grains and flours are particularly beneficial from the perspective of fiber, a critical link in a nutritious gluten-free diet.
