People who are fasting aren't generally doing so for extended periods, or  
engaging in strenous exercise while fasting. ;-)

I don't see how you're gaining muscle on a 1000 calorie a day deficit, but  
I suppose it's possible.  Do you have a set of skinfold calipers so you  
can measure bodyfat percentage changes?
