i just returned from a cruise on Royal Caribbean and
would like to share the experience. All waiters/head
waiters i talked to seemed to know what gf diet is. It
got me relaxed -unfortunately. It appeared they didn't
know  details. 3 days into the cruise i realized they
understand gf diet as a wheat-free diet. Moreover,
they didn't always know what wheat free diet is (they
brought me couscous repeatedly and insisted it's gf).
My advise: don't pay attention to their confidence.
Give them your restaurant card and explain all
details: contamination, etc.
