Thank you to all who responded.  Apologies for the delayed summaries.
Watch for a few more summaries on "fluffy cakes."

There was considerable diversity of opinion on cake mix recommendations.

Mixes Recommended for Fluffy Cakes:

GLUTEN FREE PANTRY  angel food cake  -- some raves, some thumbs down.
Turns out better w/stand mixer than w/hand mixer.  GF Pantry choc. cake mix
makes a great base for ice cream cake.

REALLY GREAT FOOD CO.  mixes – all flavors

DOWD & ROGERS  mixes w/chestnut flour.  Dense but soft, NOT rubbery. Use
jumbo/XL eggs to make them a little fluffier.

NAMASTE cake mixes

CAUSE YOU’RE SPECIAL cake mixes, Lemon & Yellow.  You can use less butter &
sub buttermilk for the milk.  Have ingred. at room temp.  Let cake cool in
oven w/door open a few min. for the most height.
