I can only speak anecdotally about Teff having had no alternative but to eat
it while in Ethiopia. I'm not sure about the nutritional content but am
assuming that it is gluten free as I did not get a reaction to Teff (whereas
other gluten grains have an immediate negative effect). Not sure about
oxalic acid content.
