I had an overwhelming response to my question about safe eating at Disneyworld in Orlando. Without a doubt, everyone said that I will have absolutely no problem. All sit-down restaurants in the parks have gf items. The only thing you have to do is contact the chef 24-48 hours in advance and let him/her know you are coming. The fast food areas have a list of every ingredient in what they offer. They will also work with you to insure things are handled properly. You can call the various parks ahead of time and talk to the executive chef of each park about the different restaurants. The following numbers will help you do this:

Magic Kingdom - (407) 824-5967
Epcot -  (407) 560-7483
MGM - (407) 560-1347
Animal Kingdom -  (407) 938-2441

It was also suggested that you take a small side cooler for snacks during the day. 

It sounds like everyone had an excellent time while they were there and found eating at Disneyworld to be the easiest of anywhere they've ever been.
