Had dinner last night at the new Sidney's on County Road E and 35E (by Target).
The rice noodles were not listed on the menu as an alternative, as they are at other Sidneys.  I asked the server about it, and she said the noodles are available on request.  She was very accomodating, even assuring me that she would specify that the rice noodles were cooked in separate water.  She seemed very aware of food allergy issues.  The manager stopped by to make sure everything was alright, and we asked her if she had received special training in restricted diets.  She said the entire wait staff had been trained to be aware of customers with food allergies, and she had to take a test which included diet restrictions before she could be a manager there.  While I was at it, I suggested they serve GF rice crackers instead of the customary bread on request.  She said that seemed fair, since they keep a supply of saltines on hand for kids to munch on; she's going to propose this to the corporate office.  

I was impressed and pleased, and gave the server a nice tip!
