Last year in a graduate seminar we looked a an enormous number of studies,
reviews and meta-analyses on colon cancer and I can assure you that the
association between red meat and colon cancer simply is not supported in the
literature. Sometimes the way it was cooked was associated, sometimes
processed deli meats (nitrates anyone?), sometimes starch intake, sometimes
the kind of cooking oil used -- but overall the association with red meat was
a dud.
