The paleo diet eliminates the use of food that cannot be consumed by
someone who only has a sharpened stick.

To the extent that there are "versions" that allow this and don't allow
that, this usually means that someone is creating a diet based on their
own personal whims.

There is also continual discussion over whether this or that item is
"paleo" based on whether paleo era man would have consumed that item due
to its propagation being recent (I believe that tomatoes is one of those
items).
