Thank you for all  your responses on how to make Buttermilk. I got just about
the same advice...Buttermilk is soured milk -add lemon juice or vingear and
let sit.

Buttermilk Culture - also available in yoguart & kefir

milk substitue -use plain soy milk -add 1-2 teaspoons of lemon juice or
apple cider vinegar -let sit for 5 min. note: will not work with Vance's
