Just when I think that we are making great progress in informing the
public about celiac and gluten intolerance I was extremely upset by an
article in the Friday's Wall Street Journal 5-11-2001 written by
Elizabeth Bernstein under the FOOD section.(page W1) I was excited when
I saw the headline "Let Them Eat (Gluten-Free )Cake. The writer wrote a
sarcastic article about the inconvenience of having to serve people with
food allergies. She treats all such people as being extremely demanding
and a a pain to hosts and chefs. While she admits that there are a small
percent who have allergies she scoffs at all who need to be careful
about what they eat. She uses the words Gluten -Free in the headline but
she does not seem to know about celiac disease. We should all write to
the author and and inform her of her absolute lack of any kind of
information and that she must not have heard of the Americans with
Disabilities Act. Please contact her and her editor and publisher
stating that she has done what in effect would get her fired if she made
any such statements about the blind or mobility impaired. How awkward it
would be for her to have a guest who used a wheelchair.
