I would say by tasting it....a good brazil nut will be light and slightly
sweet...it will also have very little odor. a rancid one will have some
bitterness and will have a more pronounced odor. They will be yellowed
inside. They should be crunchy textured. I have found rancid nuts to be less
crunchy,more flexible.
Sounds like yours are ok. You should keep 'em in the fridge if you plan to
have them around for a while...they will keep longer.
