i had certainly the same problem wthout having it confirmed by a lab test.
I was craving fats never getting satisfied with them , wanting to eat more
.It was making my hair greassy,  my stool fatty.
The problem resolved when i slowed down big time in vegetal sources of fats
( avocados and nuts principally) and got my fill of animal sources of fat
 grass fed animals or wild).( everything raw)
The problem reappear if i eat lamb who have access to grain , or if i eat
too much of avocados or nuts. I didn't observed any of those symptoms no
matter how much fat i can put my hand on ( brain ,bone marrow ,kidney fat or
between muscle fats ) as long it come from wild animals or grass fed >It is
true that the availability of thoses are rather naturally limited ( wild
animals don't carry extra pounds like domestic ones), so i barely can eat
too much.

My explanation of all of that is related to the ratio of the differents
fatty acids ( particulary omega 3s to omega 6) .
The fats of domestic animals fed unnaturally ( grain fed ) are of a
different composition than the  fats of the wild ones.
In your list i see olive oil ,nuts , and pork which have the worst diet in
that regard ( not a mistake ,  farmers want them fat and you can't do that
without denaturing their food).
the coconut if from fresh coconuts might be okay but if coming from a can
and necessarelly heated might reinforce the overload of the wrong kind of
fats . The body is clever enough to not digest more than it need but it can
still be deficient in the right kind of fats . My craving for fat was trying
to deal with that .It took me a while to figure it out that this attraction
was right but my answer was wrong (giving vegetal sourc of fats).
Better eat less fats but the right kind.
