Well, it seems by the large amount of replies I received to my post, that
there are indeed a lot of sick people out there who refuse to even think
about not eating gluten. General consensus was that this will continue to
be the norm until there is more wide spread awareness about gluten, that
patients suggest gluten intolerance to their doctors instead of waiting to
be diagnosed with IBS etc..,  more palatable/commercial gf food is readily
available (stuff that doesn't taste and chew like cardboard) and doctors
become more aware.

I wasn't really expecting so many replies to my post. Thanks to all that did.
