Hi Lucia,

it's an advantage to have them shelled because the shell contains
harmful substances around the nut. I heard it from people who spent
a time in Brazil and shelled the cashews themselves. Dangerous job.

The important question would be if they are really raw. If they
still have their pink-brownish hull they most probably are. If not
they are supposedly roasted.
