Thanks for the opportunity Janis. I have only read bits and pieces or Udo's
book but find it to be outstanding resource.

I was struck by his statement that its best to get your essential fatty
acids via the consumption of oily seeds. This is very honest for a person
who manufactures an oil product. For a number of years I have been soaking
most of my seeds overnight before consumption. My question to Udo is: is
there anything wrong with this. The basic thinking behind soaking seeds is
that a seed is in the dormant stage. There are
enzyme inhibitors, and other chemical factors, such as phytates and
oxalates, designed to keep the seed dormant. When soaked in water overnight
the germination/life process begins and the seed becomes, as the theory
goes, truly a live food. The soaking is claimed to convert protein into
essential amino acids, starches into simpler sugar complexes, and retain the
digestive enzymes contained in the seed including lipase, the enzyme needed
for the proper digesting and metabolizing of fat.

My normal portions to obtain what I believe are adequate levels of EFA's
are 1/3 cup of sunflowers seeds and one tablespoon of flax seeds. I have
consumed soaked seeds drinks/meals for quite a few years now and have been
very happy, anecedotally, with the results. Would be very interest in Udo's
scientific asssesment of soaked seeds (judging by the index, he did not
mention soaking nuts it in his book)

Thanks again Janice.

If anyone is interested I would be happy to post my best tasting nut/seed
drink recepies.

Best Regards
