Speaking of  tubers that grow in cold climates   -  I have a question about " Jerusalem artichoke".

They contain no starch , but  an (indigestible ?)  polysaccharide   "inulin" !


What is the nutritional value ? (calories - indigestible inulin ?)

Do they contain any antinutrients (raw) ?



Theese tubers taste quite good (especially raw)  -  and are incredibly easy to grow .
No storage is needed - the best  is just  to leave them in the ground (frost-resistant).
