One of the myths about vegetarian diets is that it is hard to eat protein
without eating meat. There is a lot of protein in unprocessed foods. The
problem for vegetarians is:

1. Balancing the protein because each item is not balanced in the way meat
sources are (as in using grain together with beans in a meal)

2. One essential food element is missing in almost all vegetable sources
(darned if I can remember what it is for more than 15 seconds at a time).
It has to be obtained intentionally --I think it's B6 or B12. So by adding
a little powdered milk, egg or whatever, it is easy to get a balanced diet
and be mostly vegetarian.

I have spent time traveling and living with people who are "professional"
environmentalists. They are general vegetarians for the most part, but
they are not usually rabid or religious about it. The universal appearance
of tofu in grocery stores had made it much easier to do the vegetarian
thing nowadays if you have no food sensitivities.

Sorry about climbing on one of my bandwagons, but I go nuts when people
sound like they think only meat has protein in it.
