Hello.  I can suggest continuing w/ the avacados, starchy tubers in your
diet, but adding the following:  nut butters (from the health food store,
nut meal (order online - many sources) and nut flours.

You can dip the fruit slices into nut butters.  Delicious.  Make nut
meal/flour bread or muffins; which may not be strictly paleo but should add
a little weight.  When you get to your optimum weight, ease off.

Nut meal (includes nut oils) or nut flours can be combined with walnut or
almond oil, spices, organic omega-3 egg, organic non-aluminum baking powder,
organic no-sugar applesause (in place of sugar), any fruit and nut
combination you have handy to make breads and muffins.  You may want to
include a little vanilla or other extract.  Just find a typical bread or
muffin recipe and substitute!
