If you use clarified butter (aka "ghee"), it has no protein whatsoever, and

I think it should be chemically equivalent to animal fat.

he would need to completely eliminate butter for about a month and make sure
his symptoms are cleared. THEN he could challenge with a huge amount of
clarified butter to see if it provoked a response. But butter is non-paleo,
clarified or not, so it really should be looked at as different than animal
fat.
