So am I.  That's why I think variety is important -- not for taste, but  
for the various nutrients in different foods.

If you're only getting 60 to 80 grams of carbs a day, you may be in  
ketosis right now.  Staying under 100 grams is enough to keep some people  
in ketosis.  For others, you may have to drop to under 20 grams. I could  
stay in with about 60 grams.

I'm curious -- if you're just concerned about health maintenance, and  
you're not diabetic, why bother cycling your carb intake?
