The farmer's market near here is one of the places I get grass-fed tongue, grass-fed rib-eye and pastured eggs.  Last week, I bought a small package of pancreas "sweatbreads."  I've had it before in restaurants and it was the consistency of veal.  However, this was extremely fatty.  I was surprised because the cows are grass-fed and I didn't remember pancreas being fatty at all.  Anybody know if sweetbreads can be fatty or maybe this was just a mistake -- the surrounding fat was maybe mistakenly packaged.  The meat has always been delicious prior to this incident.  Any of you paleos ever experience fatty pancreas/sweetbreads?
