I make pancakes like this:

2 eggs
1 cup almond flour
1/2 cup coconut milk
1/2 cup frozen blueberries
1/2 tsp baking powder

Beat the eggs first, then add the almond floud and coconut milk.  Mix
well, then add the frozen blueberries.  Cook in a hot pan a half cup at a
time or so.  Makes 4 pretty good sized pancakes.  Top with a little honey
or applesause, and you've got a nice breakfast.

I suspect it would work fine without the baking powder, but I haven't
tried that yet.

You can be a purist and still have pancakes. :-)

Interesting.  I've not noted any problems with my nails, and I don't take
any vitamins (other than a vitamin D tablet if I'm not going to be outside
much on any given day).
