That's an interesting idea, and there might indeed be enough of a
market to get it going.  On the other hand, if the idea is to get
something that has a roughly 1:3 ratio of protein to fat, there
are options already available, such as dried sausages and salami.
These can be found without much in the way of additives if you
get them from a butcher.  I have bought "organic" salami from
Fresh Fields, and it was quite good.  This sort of thing is not
an exact substitute for pemmican, but it isn't bad.
