I experimented this past weekend with one of our favourite recipes,
turkey tetrazzini. It is a cream sauce with turkey and bacon served over
noodles. The problem is that it is thickened with a tub of sour cream. So
I looked for a substitute and found one in tofu(big surprise....).
I put some firm tofu in my food processer with some fresh lemon(mimics
the sourness of sour cream). I then added some flour which will be the
actual thickner. It worked amazingly well. I think this would work with
rice flour or potato flour too. The trick is to puree so it is lump free
and add enough lemon juice to add a strong sour flavour.
