Hi,

A few years back I wondered the same thing and I phoned the 1-800 number
for gerber baby foods and they sent me a copy from one of their journals
that stated that it is an immulsifier. My daughter is anaphylactic to
milk so I had to check this out thoroughly...but as I always
say...always double check it for yourself...phone gerber...they will be
glad to help you.
