I appealed to my HMO and should be getting an answer in the next couple of
days.  But, I thought others might be interested in the ideas you all
generated.

Contact the State Insurance Board or the State Insurance Commissioner
Get a lawyer involved
Give up and go gluten free
Involve your employer
Write the President of the HMO
Get the press involved
Use specific/reliable quotes, preferably from well-known sources
Might be worth it to pay for it yourself
