Part of someone's message posted earlier said that gluten consists of
several proteins and went on to talk about the breakdown of gluten (with
enzymes).  Would blood tests done on someone with undiagnosed celiac condition
reflect elevated or lowered protein levels?  Outside of what's called "the
normal range".  Or would it have no effect, or be of little diagnostic value?
