Susan, Hi! I am really behind on my e-mail and just came across your note
to Fran. I have a couple questions concerning your hamburger buns. What
recipe do you use and what do you use to shape them? I make them with a
recipe from Bette Hagemann's first cookbook and make them in English muffin
rings. I don't have a Kitchenmaid but a Sunbeam mixer. My problem is that
the dough gets so stiff and climbs the beaters so it is a real struggle to
make them. I get 12 buns from that recipe. And my kids love the buns for
hamburgers!! Just such a battle to get a batch made. However, I sometimes
weigh them and they usually come out 3 oz. so I count 1 bun as 3 carbs. Then
we usually have french fries so it is great to have humalog so Joseph can eat
his fill!!!
