My raw food cook books are just collecting dust on the shelves, so I
have decided about once a week to share some of the many recipes hiding
among the pages. (J.R. you are welcome to put these recipes on your
webpage - just leave out my name)

The following recipe is on page 83 from "Food for Thought" by Elysa
Markowitz. (to order book call (310)453-2545.)

                            Walnut Coconut Pate:

Ingredients:                               Spices:

1 1/2 cup raw walnuts                      1/2 tsp. dill
1 1/2 cup raw pine nuts                    1/8 tsp. liquid smoke
2 bunch fresh parsley                      1 tsp. garlic pickle
1/4 fresh coconut                          1 tsp.tomato powder
1/2 jicama
1-2 red bell peppers

                            Instructions:

1) In food processor: grind each nut and parsley separately: walnuts,
pine nuts, coconut until smooth.
2) In a food processor: mix nuts and spices (except jicama and bell
pepper) blending until smooth. Spice to taste.
3) Serve with jicama and red bell pepper 'chips.'

                 25 minutes to prepare.   4-6 servings.


Comments from Peter: I have not tried this recipe yet but when I do I
will probably leave out the pine nuts, which Tom Billing's fine work on
nuts(http://www.clark.net/pub/mdclingm/veg-raw/quinoa/nuts-inf.html)
show are too processed to be regarded as fresh or raw + substitute the
garlic pickle with fresh garlic. Until I find out what liquid smoke is
I will probably leave that out too.;-) If anybody makes this dish
please let us know how it turns out.
