I noticed someone questioning Sorbitol (in Crest toothpaste). I find that I
suffer from excess gas when I ingest it and was concerned it was not gf.

I called Upsher-Smith and received a letter indicating that all their
products including Sorbitol are GF.  You can reach them at 800-654-2299.
