The following applies to the USA:

Be careful of corn tortillas.  If it is treated with lime, or cooked in
lime water than it has HVP and is not GF.  Lime, or Calcium Carbonate,
has no Standard of Identity and therefore the ingredients of it can be
whatever the food manufacturer wants to put in it.  They are now using
this as another way to slip in HVP/MSG.  Check the label, some are okay.

Cheese that is colored orange has annatto color.  Annatto color can
include caramel color, which is frequently made from a gluten containing
grain.  Suggest using white cheese instead.
