Gluten-Free Baked Churros
Churros covered with sugar and cinnamon always look interesting at fairs. A few weeks ago our local paper had a recipe for baked churros but it wasn't gluten-free. This morning my grand daughter and I converted it to gluten-free and was it a winner! We made it with a nutritious flour so although they are sweet and have a lot of butter they have a nice hit of protein, fiber and lots of vitamin C.
The recipe is similar to the cream puff recipe I sent out before.
2 cup water
5 Tablespoon butter
1 Tablespoon sugar
1/4 teaspoon salt
1 cup non chalky gluten-free flour blend
5 eggs
Preheat oven to 425
Cover a baking sheet with parchment paper.
Bring water to a boil and melt butter. Add sugar and salt. Lower heat and add all the flour at once stirring with a wooden spoon. Stir until mixture forms a ball. Remove from heat. Cool slightly then add 1 egg at mixing in completely. Let stand about 5 minutes.
Drop batter by the Tablespoon onto the baking sheet. Bake 15 minutes then turn temperature to 325 and bake 25 minutes.
Melt a stick of butter. Mix 1 cup sugar with 1 1/2 Tablespoons cinnamon. Roll churros in butter then sugar.
I hope you enjoy these as much as my 3 grand children did - they only saved enough for their mom to try them.
