Here is yet another chance to celebrate!

 

Fat Tuesday, Shrove Tuesday or Pancake Tuesday has been celebrated for centuries by eating pancakes.  On this last day before lent households worked to use up the fresh ingredients that they were not going to be eating during lent.  As early a 1445, housewives raced though the streets in Britian flipping pancakes.  

 

You may not want to run down the street flipping your awesome gluten-free pancakes but you can serve them for dinner tonight.  This recipe and lots of others were posted in Natural Gluten-Free Living in February.

 

 
Zucchini Feta Dinner Pancakes

These are a great addition to Italian food or a chicken dinner.
 
3 cups grated zucchini (about 1 1/2 pounds) 
1/2 cup minced onion 
1/4 cup finely crumbled organic feta cheese 
3 eggs, lightly beaten 
3/4 cup flavorful, nutrition pancake mix
1/4 teaspoon pepper 
1/2 teaspoon dried oregano 
Olive oil nonstick cooking spray
 
Oil a skillet using olive oil and preheat to a medium heat.  
 
Squeeze the liquid from the grated zucchini.  Put in a colander for and press out any additional liquid.  Mix the zucchini, feta, eggs, pancake mix, pepper and basil.
 
On the skillet drop a scant ¼ cup of the batter.  Spread to make a 3 inch circle.  Cook until bubbles big to rise.  Turn and cook until golden brown.
