Hi folks - 
thanks for the quick replies. Most people asked for a copy of my summary, 
but Marco Venier sent me the website for the local celiac society:

The website is in Slovenian, so I will get some translation help when I 
reach our office. 

From the tourism sites, it looks like many people speak English or German, 
and while many traditional meals involve flour-based dumplings, there are 
also meat and vegetable dishes that look safe. 

I haven't found a restaurant card in Slovenian.

If I find any good bits of info while there I will pass them on, since 
several people expressed an intention to visit.
