i don't think they are actually roasted because there is a tremendous
color difference and taste between 'raw' cashews and roasted one. a
good test of the 'rawness' would be if they sprout or not [they do
soak
nicely and make in cashew cheese just like raw nuts and seeds do] i
don't recall ever having them sprout although there is usually a
little
one on the dry seed. then again i've never seen soaked raw almonds
sprout either. don't know what the germination time is.
they are extremely high in protein though, which could be seen as a
minus. make a delicious milk though.
i think that about exhausts me on cashews except for maybe a few
recipes.
