Thanks for your comments Laurie.  I have experimented with various egg
substitutions (milk and peanuts are easy) and I am wondering what you
use.  I have tried blended flax seed with water.  That one is pretty
good, especially since the flax is so good for his eczema/dry skin.  The
only drawback is the flavor it adds to the food.  I have also tried a
powdered egg substitute I found in the Health food store.  That one is
all right in some things.  The other one I have tried is soy flour mixed
with water.  That works good in cookies.  I haven't been able to find
something that holds stuff together like eggs do for muffins or banana
bread  Everything turns out so crubly.  Do you have any other
suggestions?
